Vegan wheat bread recipe

This is a vegan wheat bread recipe that I am working up over time. It’s a simple recipe but with each batch that I make, I plan on tweaking the ingredients and the amounts of each ingredient. This is the recipe as of the date of publication of this post.

Prep Time for Vegan Wheat Bread Recipe

The whole process for making this vegan wheat bread spice recipe takes a while because we have to allow time for the dough to rise.

  • The initial mix of the ingredients and kneading of the dough takes about 20 minutes.
  • Allow a full 60 minutes for the dough to rise the first time.
  • Punching the dough down and getting it back into the bowl for a second rising takes only 2-3 minutes.
  • Again, allow 60 minutes for the dough to rise a second time.
  • Finally, getting the bread into the oven to bake takes another 2-3 minutes.

Vegan Wheat Bread Recipe Ingredients

  • 1 cup of warm water
  • 1 tsp of white sugar
  • 1 tbsp of dry yeast
  • 1 1/2 tsp of salt
  • 3 cups of whole wheat flour
  • 1 tbsp vegetable shortening
  • A splash of olive oil

Preparation

  1. In a large mixing bowl, add the sugar and warm water.
  2. Then sprinkle the yeast on top of the water. Give the yeast 10-12 minutes to activate. (See my pizza crust recipe for a photo of what active yeast looks like.)
  3. Once the yeast is active, add the wheat flour and salt. Stir until the ingredients become doughy.
  4. Add the vegetable shortening.
  5. Knead the dough for 10 minutes or so until the dough is soft and all the shortening is thoroughly mixed into the dough.
  6. Pour a splash of olive oil into a bowl and brush it around the sides. (You can use either your fingers or a basting brush.)
  7. Please the dough is the oiled bowl and cover with a kitchen towel.
  8. Allow an hour or so for the dough to rise; it should roughly double in size.
  9. Take the dough out of the bowl and place it a clean surface. Punch the dough down to get the air out of it.
  10. Reshape the dough into a ball and replace it in the lightly oiled bowl, to rise again. Cover the bowl with the kitchen towel.
  11. Allow an hour or so for the dough to rise; it should roughly double in size.
  12. Preheat the over to 400° F.
  13. Take a large piece of parchment paper (16″ or so) and place into the dutch oven.
  14. Place the dough into the dutch oven.
  15. If you’d like, slice an X into the top of the dough with a sharp knife.
  16. Place the dough into the oven for 30 minutes, or until the crust is golden brown.
  17. Place the dutch oven on the counter, and remove the bread by picking it by the parchment paper. Set the bread and the parchment paper on a wire rack to cool.
